Spam Fried Rice

Spam fried rice is such a comfort food, and a great side dish for any hawaiian or asian meal. It’s the perfect way to use up leftover cooked white rice, as chilling the rice helps it dry out and not be too sticky or mushy. All you need is a large pan, and the ingredients below.

Spam Fried Rice
Make Hawaiian style fried rice easily at home! This is a great use for leftover cooked rice.
Ingredients
- 3 cups white rice cooked and refrigerated
- 1 small bunch green onions sliced, greens and white parts separated
- 3 cloves garlic minced
- 1 medium-large carrot chopped
- 1/2 can Spam we prefer reduced sodium
- 3 eggs scrambled
- 1/4 cup avocado oil
- 3 Tbsp soy sauce
- 1 tsp sesame oil
- salt and pepper to taste
Instructions
- Heat avocado oil in a large pan over medium heat.
- Add spam and cook until browned, about 10 minutes.
- Add carrots and cook until tender, about 5 minutes.
- Add cooked rice, break apart chunks, and cook until lightly browned, about 10 minutes, increasing heat if needed.
- Add white parts of green onions and garlic, cook until fragrant, about 1 minute.
- Push rice to side, and add eggs to empty space in pan. Once cooked, mix into rice.
- Add soy sauce, sesame oil, and salt and pepper to taste, stirring to mix in well.
- Garnish with green onion tops.
