Spam Fried Rice

Make Hawaiian style fried rice easily at home! This is a great use for leftover cooked rice.

Ingredients
  

  • 3 cups white rice cooked and refrigerated
  • 1 small bunch green onions sliced, greens and white parts separated
  • 3 cloves garlic minced
  • 1 medium-large carrot chopped
  • 1/2 can Spam we prefer reduced sodium
  • 3 eggs scrambled
  • 1/4 cup avocado oil
  • 3 Tbsp soy sauce
  • 1 tsp sesame oil
  • salt and pepper to taste

Instructions
 

  • Heat avocado oil in a large pan over medium heat.
  • Add spam and cook until browned, about 10 minutes.
  • Add carrots and cook until tender, about 5 minutes.
  • Add cooked rice, break apart chunks, and cook until lightly browned, about 10 minutes, increasing heat if needed.
  • Add white parts of green onions and garlic, cook until fragrant, about 1 minute.
  • Push rice to side, and add eggs to empty space in pan. Once cooked, mix into rice.
  • Add soy sauce, sesame oil, and salt and pepper to taste, stirring to mix in well.
  • Garnish with green onion tops.
