Heat avocado oil in a large pan over medium heat.
Add spam and cook until browned, about 10 minutes.
Add carrots and cook until tender, about 5 minutes.
Add cooked rice, break apart chunks, and cook until lightly browned, about 10 minutes, increasing heat if needed.
Add white parts of green onions and garlic, cook until fragrant, about 1 minute.
Push rice to side, and add eggs to empty space in pan. Once cooked, mix into rice.
Add soy sauce, sesame oil, and salt and pepper to taste, stirring to mix in well.
Garnish with green onion tops.
