Tortellini Soup
This flavorful soup is an easy one pot meal that our family has enjoyed for years! It's loaded with Italian sausage, onions, garlic, carrots, bell peppers, tomatoes, zucchini, and of course, tortellini, all simmered in a savory tomato beef broth.

1/2 large Yellow Onion, diced

minced Garlic or 2 cloves thinly sliced

Carrots
3 small-medium or 2 large, thinly sliced

Tomatoes
4 medium or 15 oz can diced tomatoes, diced

beef better than bouillon

Green Bell Pepper

2 small or 1 large Zucchini, sliced thick

Instructions
Brown sausage in a large pot over medium heat, breaking it apart as it cooks. Then remove sausage from pot and set aside.
Add onions and garlic to pot, and sauté until the onions begin to get some color.
Add carrots, tomatoes, water, tomato sauce, Italian sausage, basil, oregano, parsley, and beef better than bouillon. Simmer 30 minutes.
Add bell pepper and zucchini and simmer 30 minutes longer.
Add tortellini and simmer 5-10 minutes longer to cook tortellini through.
Serve soup with parmesean cheese.
Notes
Beef broth can be substituted for water and bouillon.
