Spinach Bites with Creamy Dipping Sauce

These SPINACH BITES are our family's all time favorite holiday appetizer! They are easy to make, can be prepped ahead of time, freeze well, and are a hit with both adults and kids. When you're ready to serve, just pop them in the oven and serve warm with our simple creamy dipping sauce.

Ingredients
  

Spinach Bites

  • 1 cup butter melted
  • 2 lbs frozen chopped spinach thawed and drained
  • 6 eggs
  • 1 ½ cups grated parmesean
  • 1 Tbsp instant minced onion
  • couple dashes nutmeg
  • 3 cups herb seasoned stuffing mix

Creamy Dipping Sauce

  • ½ cup mayonaise
  • 1 tsp sugar
  • 1 Tbsp lemon juice
  • a few dashes hot sauce
  • 1 tsp dijon mustard
  • ¼ cup sour cream

Instructions
 

Spinach Bites

  • Drain spinach well, then combine all ingredients in a large bowl, mixing well with hands.
  • Scoop/Roll into 1 Tbsp balls (use a small cookie scoop) and place on baking sheet. Refrigerate or freeze until ready to bake.
  • Bake at 375℉ for 20 minutes or until golden brown.

Dipping Sauce

  • Stir together all ingredients in a small bowl, and refrigerate until serving.
