Cookie Dough
- ½ cup salted butter cold & cut into chunks
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups all purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin spice
Rolling Sugar
- 2 Tbsp granulated sugar
- 1 Tbsp pumpkin spice
Preheat oven to 375 degrees.
Cream butter and sugars together in an electric mixer.
Add egg and vanilla, and continue mixing until smooth
Add remaining dough ingredients and mix until just incorporated.
Scoop dough into balls, and roll in pumpkin spice sugar.
Place dough onto parchment lined baking sheets and bake for 12 minutes until lightly golden. Cool on wire rack.
