Tortellini Soup

This flavorful soup is an easy one pot meal, loaded with Italian sausage, onions, garlic, carrots, bell peppers, tomatoes, zucchini, and of course, tortellini, all simmered in a savory tomato beef broth.

This family recipe goes way back for us. When I was a small child, my mom got this recipe from the grandmother of the family who lived next door. Grandma Vi we all called her. My mom made it often, and it stands out as one of my favorite family recipes. Now, I make it for our family, and Grandma Vi lives on, through her soup the next generation gets to enjoy. I have shared this recipe with friends over the years, and it has always become an instant favorite in their family as well. Tortellini Soup

This flavorful soup is an easy one pot meal that our family has enjoyed for years! It's loaded with Italian sausage, onions, garlic, carrots, bell peppers, tomatoes, zucchini, and of course, tortellini, all simmered in a savory tomato beef broth.

Ingredients
  

  • 1 LB Italian Sausage
  • 1 cup 1/2 large Yellow Onion, diced
  • 1 tsp minced Garlic or 2 cloves thinly sliced
  • 1 cup Carrots 3 small-medium or 2 large, thinly sliced
  • 2 cups Tomatoes 4 medium or 15 oz can diced tomatoes, diced
  • 12 cups Water
  • 15 oz can Tomato Sauce
  • ½ teaspoon dried Basil
  • ½ teaspoon dried oregano
  • 1 Tbsp dried Parsley
  • ¼ cup beef better than bouillon
  • 1 Green Bell Pepper diced
  • 1 ½ cups 2 small or 1 large Zucchini, sliced thick
  • 16-18 oz Cheese Tortellini refrigerated
  • Parmesean Cheese

Instructions
 

  • Brown sausage in a large pot over medium heat, breaking it apart as it cooks. Then remove sausage from pot and set aside.
  • Add onions and garlic to pot, and sauté until the onions begin to get some color.
  • Add carrots, tomatoes, water, tomato sauce, Italian sausage, basil, oregano, parsley, and beef better than bouillon. Simmer 30 minutes.
  • Add bell pepper and zucchini and simmer 30 minutes longer.
  • Add tortellini and simmer 5-10 minutes longer to cook tortellini through.
  • Serve soup with parmesean cheese.

Notes

Beef broth can be substituted for water and bouillon.
