Pumpkin Spice Snickerdoodles

Pumpkin Spice Snickerdoodle Cookies
Make the ultimate snickerdoodles without cream of tartar! Perfect pumpkin spice cookies are minutes away with this easy recipe that everyone will love. These cookies are lightly crisp on the outside, soft on the inside, and have the perfect sweetness and pumpkin spice flavor.
Ingredients
Cookie Dough
- ½ cup salted butter cold & cut into chunks
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups all purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin spice
Rolling Sugar
- 2 Tbsp granulated sugar
- 1 Tbsp pumpkin spice
Instructions
- Preheat oven to 375 degrees.
- Cream butter and sugars together in an electric mixer.
- Add egg and vanilla, and continue mixing until smooth
- Add remaining dough ingredients and mix until just incorporated.
- Scoop dough into balls, and roll in pumpkin spice sugar.
- Place dough onto parchment lined baking sheets and bake for 12 minutes until lightly golden. Cool on wire rack.
