Ingredients
- 49.5 oz can baked beans 3 16.5 oz cans
- ½ red bell pepper chopped
- ½ small yellow onion chopped
- ½ jalapeno or more if you like it spicy, seeded and chopped fine
- ½ cup Ketchup
- ⅓ cup brown sugar
- ¼ cup apple cider vinegar
- 3 thick slices bacon chopped
Instructions
- Cook bacon in a large pot over medium heat.
- Remove bacon and set aside, drain grease.
- Cook onion, bell pepper, and jalapeño in pot until soft, scraping up browned bits from bottom of pot.
- Add baked beans, ketchup, brown sugar, apple cider vinegar, and cooked bacon. Cover with lid, reduce heat to low and allow to simmer as long as you like (at least 30 minutes, or up to 2+ hours), stirring occasionally. Sauce will thicken as they simmer. If desired, you can transfer to an oven safe dish and thicken in oven.
